Brewing has been described as part science part craft. Although this is true, the
balance varies depending on the size of the brewery. Unsurprisingly, bigger breweries
tend to be driven more by science and technology whilst micro-breweries take a more
hands-on or artisan approach to brewing. At the Hooker Brewery, we hand-craft every
batch to ensure that the perfect balance of malt sugars and hop flavours are extracted
into the beer. The beer is produced in 650 litre batches and, because no chemicals are
added to speed the process up, it spends an unusually long period (minimum of six weeks)
in fermentation and conditioning before being ready for filtration and packaging. It might
not make economic sense - sort of like a Hooker waiting for her wedding night - but it's so worth it.
We also do our best to minimise our impact on the environment by reusing and recycling as
much as possible. All of our grain by-products are given to a local farmer to be used as
animal feed, we recover energy during the brewing process, we recycle our yeast and minimise
the amount of packaging used.
After qualifying with a Master's degree in Brewing and Distilling, our Brewmaster, Aidan Murphy,
spent several years perfecting his craft by working in and visiting breweries all over the world,
before returning to Ireland to design and create Galway Hooker Irish Pale Ale. Only the best
ingredients are used in its production and, unlike many other breweries, we do not use cheaper
adjuncts such as sugar, syrups, extracts and unmalted cereals. We use nothing more that the
four basic ingredients of malt, hops, yeast and water.

The beer initially greets the palate with a balanced burst of tangy bitterness and understated
biscuity flavours which perfectly compliment the floral aroma and citrusy, dry finish. Abv: 4.4%
